Step 1: Preheat your oven to 325°F (165°C).
Step 2: In a large bowl, cream together the butter and sugar until light and fluffy. This should take about 5-7 minutes on medium speed.
Step 3: Add the eggs, one at a time, beating well after each addition.
Step 4: Add the lemon extract and mix until combined.
Step 5: Gradually add the flour to the mixture, alternating with the 7-Up soda. Start and end with flour (i.e. flour, 7-Up, flour, 7-Up, flour). Mix until just combined.
Step 6: Grease your bundt pan with cooking spray, making sure to cover every crevice.
Step 7: Pour the batter into the prepared pan, making sure to even out the top.
Step 8: Bake the cake for 1 hour and 30 minutes, or until a toothpick inserted into the center comes out clean.
Step 9: Allow the cake to cool in the pan for 10 minutes before flipping it onto a wire rack to cool completely.
