- 1 cup cooking salad oil (e.g., Wesson)
- 1½ cups sugar
- ¼ cup molasses
- 4 eggs
- 2 cups sifted GOLD MEDAL Flour
- 1 tsp. baking powder
- 2 tsp. salt
- 2 tsp. cinnamon
- 1 cup orange juice
- 1 cup more sifted GOLD MEDAL Flour
- 1 tsp. nutmeg
- 2½ cups seedless raisins 15 oz.
- 2 cups cut-up dates 1 lb.
- 2 cups mixed candied fruit 1 lb.
- 1 cup nuts broken in half
Heat your oven to 275°F (slow). Line two 8½ x 4½ x 2½ inch loaf pans with brown paper.
In a large bowl, combine cooking oil, sugar, molasses, and eggs. Beat vigorously with a spoon or electric mixer for 2 minutes until the mixture is well combined.
Sift together the 2 cups of flour, baking powder, salt, cinnamon, and nutmeg. Gradually stir the dry mixture into the wet ingredients, alternating with the orange juice. Continue mixing until well blended.
Mix the remaining 1 cup of flour with the raisins, dates, mixed candied fruit, and nuts to coat evenly.
Add the fruit and nut mixture to the batter, mixing thoroughly. Pour the batter evenly into the prepared loaf pans.
Place a pan of water on the lower oven rack to ensure moisture during baking. Bake the cakes for 2½ to 3 hours, or until a toothpick inserted into the center comes out clean.
Allow the cakes to cool in the pans for 15 minutes before removing them. Once cooled, transfer to racks and remove the paper. Store tightly wrapped in aluminum foil and place in a covered jar in a cool place to ripen for maximum flavor.
