Ingredients
  

  • 500 grams of flat rice noodles
  • 500 grams of pork or beef preferably tenderloin or shoulder
  • 1 onion chopped
  • 4 cloves of garlic minced
  • 2 tablespoons of cooking oil
  • 1 teaspoon of ground black pepper
  • 1 teaspoon of fish sauce
  • 1 teaspoon of soy sauce
  • 6 cups of water
  • Salt to taste
  • Optional toppings: hard-boiled eggs chicharon (pork cracklings), spring onions, and calamansi (Filipino lime)

Instructions
 

Step 1: Prepare the Meat

  • Cut the pork or beef into small, bite-sized pieces.
  • Season the meat with salt and pepper.
  • Heat the cooking oil in a large pot over medium heat.
  • Sauté the chopped onions and minced garlic until fragrant.
  • Add the seasoned meat and cook until browned.

Step 2: Create the Broth

  • Pour water into the pot with the meat.
  • Add fish sauce and soy sauce for additional flavor.
  • Bring the mixture to a boil and let it simmer for about 45 minutes to an hour until the meat becomes tender.

Step 3: Cook the Noodles

  • While the broth is simmering, prepare the rice noodles according to the package instructions.
  • Drain and set aside.

Step 4: Assemble and Serve

  • Place a generous portion of cooked noodles in a serving bowl.
  • Ladle the hot broth over the noodles, ensuring a good balance of meat and broth.
  • Garnish with your preferred toppings such as hard-boiled eggs, chicharon, spring onions, and a squeeze of calamansi for a citrusy kick.
