Ingredients

  • 4 pork chops bone-in and about 1 inch thick
  • 4 garlic cloves minced
  • 1 tbsp dried oregano
  • 1 tbsp ground cumin
  • 1 tbsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup lime juice
  • 1/4 cup orange juice
  • 1/4 cup vegetable oil
  • 1/4 cup all-purpose flour
  • Oil for frying

Instructions

  • In a large bowl, mix the minced garlic, oregano, cumin, paprika, salt, black pepper, lime juice, orange juice, and vegetable oil.
  • Add the pork chops to the bowl and turn them over a few times to coat them evenly with the marinade. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to overnight.
  • Remove the pork chops from the marinade and shake off any excess. Dredge the pork chops in the all-purpose flour, shaking off any excess.
  • In a large skillet or frying pan, heat enough oil to cover the bottom of the pan over medium-high heat. When the oil is hot, carefully add the pork chops to the pan.
  • Cook the pork chops for 3-4 minutes on each side, or until they are golden brown and crispy. Use a meat thermometer to ensure that the internal temperature of the pork chops reaches 145°F.
  • Remove the pork chops from the pan and place them on a paper towel-lined plate to drain off any excess oil.
