Ingredients
  

  • 2 slices of whole wheat bread
  • 2 eggs
  • 1 scoop of vanilla protein powder
  • 1/4 cup of unsweetened almond milk
  • 1/4 cup of plain Greek yogurt
  • 1 tsp of vanilla extract
  • 1/4 tsp of cinnamon
  • Coconut oil or cooking spray

Instructions
 

  • In a bowl, whisk together the eggs, protein powder, almond milk, Greek yogurt, vanilla extract, and cinnamon until well combined.
  • Preheat a non-stick skillet or griddle over medium heat.
  • Dip each slice of bread into the egg mixture, making sure to coat both sides evenly.
  • Add a small amount of coconut oil or cooking spray to the skillet.
  • Place the coated bread slices onto the skillet and cook for 2-3 minutes on each side, or until golden brown.
  • Serve with your favorite toppings, such as fresh fruit, nut butter, or sugar-free syrup.
