Ingredients
  

  • 2 tablespoons of olive oil
  • 1 onion diced
  • 3 carrots peeled and sliced
  • 3 celery stalks sliced
  • 2 garlic cloves minced
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • 6 cups of chicken broth
  • 1 bay leaf
  • 2 cups of cooked and shredded chicken
  • 2 cups of egg noodles
  • Salt and pepper to taste

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion, sliced carrots, and sliced celery to the pot and cook until the vegetables are soft and the onion is translucent about 5-7 minutes.
  • Add the minced garlic, dried thyme, and dried rosemary to the pot and cook for an additional 1-2 minutes, stirring constantly.
  • Pour in the chicken broth and add the bay leaf to the pot. Bring the broth to a simmer.
  • Add the shredded chicken to the pot and stir to combine.
  • Add the egg noodles to the pot and simmer until they are cooked through, about 8-10 minutes.
  • Remove the bay leaf from the pot and season the soup with salt and pepper to taste.
  • Serve the soup hot with some crusty bread or crackers on the side.
