- 2 tablespoons of olive oil
- 1 onion diced
- 3 carrots peeled and sliced
- 3 celery stalks sliced
- 2 garlic cloves minced
- 1 teaspoon of dried thyme
- 1 teaspoon of dried rosemary
- 6 cups of chicken broth
- 1 bay leaf
- 2 cups of cooked and shredded chicken
- 2 cups of egg noodles
- Salt and pepper to taste
Heat the olive oil in a large pot over medium heat.
Add the diced onion, sliced carrots, and sliced celery to the pot and cook until the vegetables are soft and the onion is translucent about 5-7 minutes.
Add the minced garlic, dried thyme, and dried rosemary to the pot and cook for an additional 1-2 minutes, stirring constantly.
Pour in the chicken broth and add the bay leaf to the pot. Bring the broth to a simmer.
Add the shredded chicken to the pot and stir to combine.
Add the egg noodles to the pot and simmer until they are cooked through, about 8-10 minutes.
Remove the bay leaf from the pot and season the soup with salt and pepper to taste.
Serve the soup hot with some crusty bread or crackers on the side.
