I made my own Erin french butter cake with this simple recipe.

Ingredients
  

  • 2 sticks unsalted butter at room temperature
  • 1 3/4 cups granulated sugar
  • 4 large eggs at room temperature
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • Whipped cream or vanilla ice cream for serving (optional)

Instructions
 

  • Step 1: Preheat your oven to 350°F (180°C). Butter and flour a 9-inch cake pan, and set it aside.
  • Step 2: In a large bowl, cream the butter and sugar together until light and fluffy. This should take about 3-4 minutes with an electric mixer.
  • Step 3: Add the eggs, one at a time, beating well after each addition.
  • Step 4: In a separate bowl, whisk together the flour, baking powder, and salt.
  • Step 5: Gradually add the dry ingredients to the wet mixture, beating until well combined.
  • Step 6: Pour the batter into the prepared cake pan, and smooth out the top with a spatula.
  • Step 7: Bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • Step 8: Allow the cake to cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
  • Step 9: Serve warm with a dollop of whipped cream or a scoop of vanilla ice cream, if desired.
