Ingredients

  • 1 can of salmon 14-16 ounces
  • 1/2 cup breadcrumbs
  • 2 large eggs
  • 1/4 cup diced onion
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup vegetable oil for frying or cooking spray (for baking)

Instructions

  • Prepare the salmon: Drain the canned salmon and flake it into small pieces in a mixing bowl, removing any bones or skin.
  • Add the ingredients: Add breadcrumbs, diced onion, chopped parsley, Dijon mustard, garlic powder, salt, and black pepper to the bowl with the salmon.
  • Mix well: Gently mix all the ingredients until well combined, being careful not to overmix.
  • Shape into patties: Take about 1/4 cup of the mixture at a time and form it into round patties, approximately 3 inches in diameter and 1/2 inch thick. Place the patties on a plate or tray and refrigerate for 30 minutes if possible.
  • Choose your cooking method: Pan-frying or baking. For pan-frying, heat a skillet with vegetable oil and cook the patties for 3-4 minutes per side until golden brown and crispy. For baking, preheat oven to 375°F (190°C), place patties on a lined baking sheet, coat with cooking spray, and bake for 12-15 minutes, flipping halfway through.
  • Serve and enjoy: Serve the patties as a main course with side dishes, in sandwiches or wraps, and garnish with fresh parsley or a squeeze of lemon juice.
