Ingredients

  • 16 oz linguine or spaghetti
  • 1/2 cup unsalted butter
  • 4 cloves garlic minced
  • 1/2 tsp red pepper flakes adjust to taste
  • 1 lb large shrimp peeled and deveined
  • 1/2 cup dry white wine
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese plus extra for garnish
  • Salt and black pepper to taste
  • Chopped fresh parsley or basil for garnish

Instructions

  • Bring a large pot of salted water to a boil. Add the linguine or spaghetti and cook until al dente according to package instructions. Drain the pasta, reserving 1/2 cup of pasta water, and set aside.
  • In a large skillet or pan, melt the butter over medium heat. Add the minced garlic and red pepper flakes and cook for 1-2 minutes until fragrant. Be careful not to burn the garlic. Add the shrimp to the pan and cook for 2-3 minutes on each side until pink and cooked through. Remove the shrimp from the pan and set aside.
  • In the same pan, add the white wine and chicken broth. Bring to a simmer and cook for 3-4 minutes until the liquid has reduced by half. Add the heavy cream and grated Parmesan cheese to the pan and stir to combine. Cook for another 2-3 minutes until the sauce has thickened slightly. Season with salt and black pepper to taste.
  • Add the cooked pasta to the pan with the sauce and toss to coat the pasta evenly in the sauce. If the sauce is too thick, you can add some of the reserved pasta water to thin it out to your desired consistency. Add the cooked shrimp back to the pan and gently toss to combine.
