- Chicken: 500g cut into bite-sized pieces
- Vegetables: 2 carrots chopped; 10-12 beans, chopped; 2 potatoes, chopped
- Coconut milk: 400ml
- Onion: 1 medium chopped
- Green chilies: 2 slit
- Ginger: 1-inch piece chopped
- Garlic: 5-6 cloves chopped
- Turmeric powder: 1 tsp
- Cumin powder: 1 tsp
- Coriander powder: 1 tsp
- Salt: to taste
- Water: 1 cup
- Oil: 2 tbsp
Heat the oil in a pan and add the chopped onions. Saute until they turn translucent.
Add the chopped ginger and garlic, and saute for a minute until the raw smell goes away.
Add the chopped vegetables - carrots, beans, and potatoes - and saute for 2-3 minutes.
Add the chicken pieces and saute until they turn brown.
Add the turmeric powder, cumin powder, coriander powder, and salt, and mix well.
Add water and bring the mixture to a boil. Cover the pan and let it simmer for 15-20 minutes until the chicken is cooked through and the vegetables are tender.
Add the coconut milk and green chilies, and mix well. Let the mixture simmer for another 5-7 minutes.
Turn off the heat and let the Chicken Sodhi rest for a few minutes before serving.
