Ingredients
  

  • Chicken: 500g cut into bite-sized pieces
  • Vegetables: 2 carrots chopped; 10-12 beans, chopped; 2 potatoes, chopped
  • Coconut milk: 400ml
  • Onion: 1 medium chopped
  • Green chilies: 2 slit
  • Ginger: 1-inch piece chopped
  • Garlic: 5-6 cloves chopped
  • Turmeric powder: 1 tsp
  • Cumin powder: 1 tsp
  • Coriander powder: 1 tsp
  • Salt: to taste
  • Water: 1 cup
  • Oil: 2 tbsp

Instructions
 

  • Heat the oil in a pan and add the chopped onions. Saute until they turn translucent.
  • Add the chopped ginger and garlic, and saute for a minute until the raw smell goes away.
  • Add the chopped vegetables - carrots, beans, and potatoes - and saute for 2-3 minutes.
  • Add the chicken pieces and saute until they turn brown.
  • Add the turmeric powder, cumin powder, coriander powder, and salt, and mix well.
  • Add water and bring the mixture to a boil. Cover the pan and let it simmer for 15-20 minutes until the chicken is cooked through and the vegetables are tender.
  • Add the coconut milk and green chilies, and mix well. Let the mixture simmer for another 5-7 minutes.
  • Turn off the heat and let the Chicken Sodhi rest for a few minutes before serving.
