Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 2 cups sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 3 cups peeled and diced apples
  • 1 cup chopped walnuts
  • 1 cup raisins
  • Caramel Glaze:
  • 1/2 cup unsalted butter
  • 1/2 cup brown sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  • Step 1: Preheat the oven and prepare the pan.
  • Preheat your oven to 350°F (180°C) and grease a 9x13-inch baking pan with cooking spray or butter.
  • Step 2: Mix the dry ingredients.
  • In a large mixing bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt until well combined.
  • Step 3: Mix the wet ingredients.
  • In a separate bowl, beat the sugar, vegetable oil, eggs, and vanilla extract with an electric mixer until creamy and smooth.
  • Step 4: Combine the wet and dry ingredients.
  • Gradually add the dry ingredients to the wet ingredients, mixing well after each addition. Fold in the diced apples, chopped walnuts, and raisins.
  • Step 5: Bake the cake.
  • Pour the batter into the prepared pan and bake for 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • Step 6: Make the caramel glaze.
  • While the cake is baking, make the caramel glaze. In a saucepan, melt the butter over medium heat. Add the brown sugar and milk, stirring constantly until the sugar is dissolved. Bring the mixture to a boil and let it cook for 2-3 minutes, stirring occasionally. Remove from heat and stir in the vanilla extract.
  • Step 7: Glaze the cake.
  • Once the cake is done, remove it from the oven and let it cool for 10 minutes. Then, poke holes all over the cake with a fork and pour the warm caramel glaze over it, spreading it evenly with a spatula. Let the cake cool completely before slicing and serving.
