Ingredients
  

  • 6 turkey wings
  • 1 tablespoon of salt
  • 1 tablespoon of black pepper
  • 2 tablespoons of vegetable oil
  • 1 onion chopped
  • 3 cloves of garlic minced
  • 1 tablespoon of grated ginger
  • 2 tablespoons of curry powder
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 1 teaspoon of ground turmeric
  • 1 can of diced tomatoes
  • 1 cup of chicken broth
  • 2 tablespoons of chopped cilantro optional

Instructions
 

  • Preheat the oven to 375°F.
  • Season the turkey wings with salt and black pepper.
  • Heat the vegetable oil in a large oven-safe pot over medium-high heat. Add the turkey wings and sear them until they are browned on all sides.
  • Remove the turkey wings from the pot and set them aside.
  • In the same pot, add the chopped onions, minced garlic, and grated ginger. Sauté for a few minutes until the onions are translucent.
  • Add the curry powder, cumin, coriander, and turmeric to the pot. Toast the spices for about 1 minute until they become fragrant.
  • Add the diced tomatoes and chicken broth to the pot, and stir well.
  • Return the turkey wings to the pot, and spoon the curry sauce over the top of the wings.
  • Cover the pot with a lid, and transfer it to the preheated oven.
  • Bake for 45 minutes, and then remove the lid. Bake for an additional 15 minutes to allow the sauce to thicken and the turkey wings to become tender.
  • Remove the pot from the oven, and sprinkle the chopped cilantro over the top of the turkey wings (optional).
