Preheat the oven to 375°F.
Season the turkey wings with salt and black pepper.
Heat the vegetable oil in a large oven-safe pot over medium-high heat. Add the turkey wings and sear them until they are browned on all sides.
Remove the turkey wings from the pot and set them aside.
In the same pot, add the chopped onions, minced garlic, and grated ginger. Sauté for a few minutes until the onions are translucent.
Add the curry powder, cumin, coriander, and turmeric to the pot. Toast the spices for about 1 minute until they become fragrant.
Add the diced tomatoes and chicken broth to the pot, and stir well.
Return the turkey wings to the pot, and spoon the curry sauce over the top of the wings.
Cover the pot with a lid, and transfer it to the preheated oven.
Bake for 45 minutes, and then remove the lid. Bake for an additional 15 minutes to allow the sauce to thicken and the turkey wings to become tender.
Remove the pot from the oven, and sprinkle the chopped cilantro over the top of the turkey wings (optional).
