Ingredients
  

  • 4 ears of fresh corn shucked and kernels removed
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon Cajun seasoning or a blend of paprika, cayenne pepper, garlic powder, and onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 egg beaten
  • 1/2 cup milk
  • Vegetable oil for frying

Instructions
 

  • To make the batter, whisk together the flour, baking powder, Cajun seasoning, salt, and pepper in a medium-sized mixing bowl.
  • In a separate bowl, beat the egg and milk together until well combined. Then, pour the egg mixture into the flour mixture and stir until you have a smooth batter.
  • Once your batter is ready, it's time to coat the corn kernels. Add the corn kernels to the bowl of batter and stir until they're fully coated.
  • In a large skillet or deep fryer, heat enough vegetable oil to cover the corn kernels over medium-high heat. Once the oil is hot, use a slotted spoon or tongs to carefully drop the coated corn kernels into the oil.
  • Fry the corn kernels for 2-3 minutes or until they're golden brown and crispy. Be sure to stir the corn occasionally to ensure that all sides are evenly cooked.
