- 2 ham shanks
- 1 cup of brown sugar
- 1/2 cup of honey
- 1/2 cup of maple syrup
- 1/4 cup of Dijon mustard
- 2 cloves of garlic minced
- 1 tbsp of thyme
- 1 tsp of pepper
- 1 tsp of salt
Start by preparing your ingredients. Mix together the brown sugar, honey, maple syrup, Dijon mustard, garlic, thyme, pepper, and salt in a small bowl.
Place your ham shanks in a large baking dish or roasting pan.
Using a brush, coat the ham shanks with the mixture you prepared in step 1. Be sure to cover the entire surface of the shanks.
Preheat your smoker to 225 degrees Fahrenheit.
Place the baking dish or roasting pan with the ham shanks in the smoker. Smoke the shanks for about 2-3 hours, or until the internal temperature of the meat reaches 145 degrees Fahrenheit.
Once the shanks have reached the desired temperature, remove them from the smoker and let them rest for about 10 minutes before serving.
