Preheat your smoker to 225°F. If you do not have a smoker, you can also use a charcoal or gas grill with a smoke box.
While the smoker is heating up, prepare the sweet potatoes. Peel and cut them into 1/2-inch thick slices.
In a small bowl, mix together the olive oil, brown sugar, smoked paprika, salt, and pepper.
Place the sweet potato slices in a large mixing bowl and toss them with the oil and spice mixture until they are evenly coated.
If using wood chips, soak them in water for 30 minutes. Drain and place them in the smoker or smoke box.
Place the sweet potato slices on the smoker grates and smoke them for 1 hour and 30 minutes.
After 1 hour and 30 minutes, remove the sweet potatoes from the smoker and let them cool for a few minutes.
