  • 4 cups chicken broth
  • 2 cups diced cooked chicken breast
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 14.5 oz diced tomatoes
  • 1 cup frozen corn
  • 1/2 cup diced onion
  • 1/4 cup diced green bell pepper
  • 2 cloves garlic minced
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sour cream
  • 1/4 cup shredded cheddar cheese
  • 4 flour tortillas cut into strips

Instructions
 

  • In a large pot, combine the chicken broth, chicken, black beans, diced tomatoes, corn, onion, bell pepper, garlic, chili powder, cumin, salt, black pepper, and cayenne pepper. Bring the mixture to a boil over high heat.
  • Reduce the heat to medium-low and let the soup simmer for about 15-20 minutes, until the vegetables are tender.
  • Stir in the cilantro and let the soup simmer for an additional 5 minutes.
  • Ladle the soup into bowls, and top each bowl with a dollop of sour cream, shredded cheese, and tortilla strips.
