Equipment

  • oven
  • spoon

Ingredients

  • 2 1/4 cups of all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup of unsalted butter at room temperature
  • 3/4 cup of granulated sugar
  • 3/4 cup of brown sugar
  • 2 large eggs
  • 2 tsp of vanilla extract
  • 2 cups of Raspberry preserves
  • 1 cup of cream cheese at room temperature

Instructions

  • Step 1: Preheat your oven Before you begin making your cookies preheat your oven to 350 degrees F. This will ensure that your cookies are cooked to perfection.
  • Step 2: Mix the dry ingredients In a medium-sized bowl, mix together the flour, baking soda, baking powder, and salt. Set this mixture aside for now.
  • Step 3: Cream the butter and sugars In a separate large bowl, cream together the butter, granulated sugar, and brown sugar until the mixture is light and fluffy. This should take about 3-5 minutes.
  • Step 4: Add the eggs and vanilla Add the eggs one at a time to the butter and sugar mixture, making sure to mix well after each addition. Then, add the vanilla extract and mix again.
  • Step 5: Add the dry ingredients Slowly add the dry ingredients to the butter and sugar mixture, stirring until everything is well combined.
  • Step 6: Fold in the raspberry preserves Fold in the raspberry preserves into the dough. Mix until the preserves are evenly distributed.
  • Step 7: Add cream cheese Add cream cheese, and mix until well combined.
  • Step 8: Form the cookies Using a cookie scoop or spoon, form the dough into small balls. Place the balls on a baking sheet lined with parchment paper, leaving about 2 inches between each cookie.
  • Step 9: Bake the cookies Bake the cookies in the preheated oven for 12-15 minutes, or until they are golden brown on the edges. Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • If using frozen raspberries, make sure to thaw them before adding them to the dough.
  • When making the indentation for the cream cheese filling, use the back of a teaspoon or a small cookie scoop, this will ensure that the filling is evenly distributed.
  • Try experimenting with different variations, such as using different types of berries or nuts, to find your favorite version of the recipe.
