Ingredients
  

  • 1 lb. bacon
  • 1 large onion finely diced
  • 3 cloves of garlic minced
  • 1/4 cup brown sugar
  • 1/4 cup maple syrup
  • 1/4 cup apple cider vinegar
  • 1/2 tsp. smoked paprika
  • 1/4 tsp. cayenne pepper optional

Instructions
 

  • Start by cooking the bacon in a large skillet over medium heat. Cook until the bacon is crispy, then remove it from the skillet and set it aside.
  • In the same skillet, add the onion and garlic and cook until softened, about 5 minutes.
  • Stir in the brown sugar, maple syrup, apple cider vinegar, smoked paprika, and cayenne pepper (if using). Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes, or until the liquid has reduced and thickened.
  • Chop the cooked bacon into small pieces and add it to the skillet. Stir to combine.
  • Let the mixture cool for a few minutes, then transfer it to a food processor or blender and pulse until it's the desired consistency.
  • Taste and adjust the seasoning as needed.
  • Transfer the bacon jam to a jar or container and store it in the refrigerator for up to 2 weeks.

  • High-quality bacon gives jam the greatest flavor. Look for thick-cut, meat-to-fat bacon.
  • Low and slow cooking ensures consistent cooking and crispy bacon.
  • Adjust sweetness and heat: The recipe calls for 1/4 cup brown sugar and 1/4 teaspoon cayenne pepper (optional), but you can alter the sweetness and spice to taste. Adjust during cooking.
  • After cooling, puree the ingredients in a food processor or blender to your desired consistency.
