- 2 tablespoons vegetable oil
- 1 onion diced
- 2 cloves of garlic minced
- 2 cups chicken broth
- 2 cups water
- 1 can 14.5 oz diced tomatoes
- 1 can 15 oz black beans, rinsed and drained
- 1 can 4 oz diced green chilies
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper optional
- 1/2 cup sour cream
- 1/2 cup chopped fresh cilantro
- 2 cups shredded cooked chicken
- 4 cups crushed tortilla chips
- 1 cup shredded cheddar cheese
Heat the oil in a large pot over medium heat.
Add the onion and garlic and cook until softened, about 5 minutes.
Add the chicken broth, water, diced tomatoes, black beans, diced green chilies, cumin, chili powder, salt, black pepper, and cayenne pepper (if using).
Bring the soup to a boil, then reduce the heat and simmer for 20 minutes.
Stir in the sour cream, cilantro, and cooked chicken.
Ladle the soup into bowls and top with crushed tortilla chips and shredded cheese.
