- 2 cups of cooked and shredded chicken breast
- 4 cups of chicken broth
- 1 can of diced tomatoes
- 1 medium onion diced
- 1 jalapeño pepper diced
- 2 cloves of garlic minced
- 1 teaspoon of cumin
- 1 teaspoon of chili powder
- Salt and pepper to taste
- 1 cup of crushed tortilla chips
- 1 avocado diced
- 1/2 cup of grated cheese
- Sour cream optional
Over medium heat, heat a tablespoon of oil in a big pot or Dutch oven.
Add the diced onions, jalapeño, and minced garlic and sauté until transparent. 5 minutes should do it.
To unleash their scent, add cumin and chili powder and mix for 1 minute.
Bring the diced tomatoes, chicken broth, and shredded chicken to a simmer.
