Ingredients
  

  • 2 cups of cooked and shredded chicken breast
  • 4 cups of chicken broth
  • 1 can of diced tomatoes
  • 1 medium onion diced
  • 1 jalapeño pepper diced
  • 2 cloves of garlic minced
  • 1 teaspoon of cumin
  • 1 teaspoon of chili powder
  • Salt and pepper to taste
  • 1 cup of crushed tortilla chips
  • 1 avocado diced
  • 1/2 cup of grated cheese
  • Sour cream optional

Instructions
 

  • Over medium heat, heat a tablespoon of oil in a big pot or Dutch oven.
  • Add the diced onions, jalapeño, and minced garlic and sauté until transparent. 5 minutes should do it.
  • To unleash their scent, add cumin and chili powder and mix for 1 minute.
  • Bring the diced tomatoes, chicken broth, and shredded chicken to a simmer.
  • Taste with salt and pepper. You can customize the seasoning.
  • Let the soup simmer for 10-15 minutes to blend flavors. The soup will thicken and taste better.
  • Ladle the soup into bowls and top with crumbled tortilla chips, chopped avocado, grated cheese, and a dollop of sour cream (if desired). The soup's garnishes are optional but add crispness and creaminess.
