Preheat your oven to 350°F (175°C).
In a shallow dish, combine the flour, garlic powder, onion powder, basil, oregano, and a pinch of salt and pepper. In a separate shallow dish, beat the eggs. In a third shallow dish, mix together the breadcrumbs.
Coat each chicken breast in the flour mixture, shaking off any excess. Dip the chicken into the beaten eggs, letting any excess drip off. Finally, coat the chicken in the breadcrumbs, pressing gently to help them stick.
In a large frying pan, heat the olive oil over medium heat. When the oil is hot, carefully add the breaded chicken breasts and cook for 3-4 minutes on each side, or until golden brown.
Transfer the chicken to a baking dish and top each breast with a spoonful of marinara sauce. Sprinkle the mozzarella cheese over the top of the sauce.
Bake the chicken in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
Garnish with fresh basil and serve hot with your choice of sides. We recommend a simple green salad or a bowl of pasta tossed in marinara sauce.
