- 2 red bell peppers
- 1 cup sour cream or heavy cream
- 1 garlic clove minced
- 1 tablespoon lemon juice
- 1 teaspoon smoked paprika
- Salt and pepper to taste
Pre-heat your grill. Remove the seeds and tops off red peppers while the grill heats up. Grill the peppers until the skin is blackened, 5-10 minutes. Cool the peppers after grilling.
Peel the peppers with a sharp knife after they cool. It should remove easily, leaving nicely roasted and smokey red peppers. Set aside the chopped peppers.
Mix sour cream, minced garlic, lemon juice, and smoked paprika in a small bowl. Blend.
Add chopped red peppers to the sour cream basin. Blend or immersion blend the mixture until creamy. More sour cream can thicken the sauce. More lemon juice might thin the sauce.
Salt and pepper the smooth, creamy sauce. You can also add herbs and spices. Cumin, chili powder, and fresh cilantro are choices.
