  • 1 pound of fresh squid cleaned and cut into bite-sized pieces
  • 1/2 cup of dark soy sauce
  • 2 cloves of garlic minced
  • 1 tablespoon of cornstarch
  • 1 tablespoon of vegetable oil
  • 1 teaspoon of sugar
  • 1/2 teaspoon of ground white pepper
  • 1/4 teaspoon of sesame oil

Instructions
 

  • Start by preparing the squid. If you are using whole squid, cut off the tentacles and discard the innards. Then, slice the body of the squid into bite-sized pieces.
  • In a small bowl, mix together the dark soy sauce, minced garlic, cornstarch, sugar, and white pepper. Stir well to combine all of the ingredients.
  • Heat the vegetable oil in a large frying pan or wok over medium-high heat. When the oil is hot, add the squid pieces and stir-fry for 2-3 minutes, until they are lightly browned and just cooked through.
  • Add the soy sauce mixture to the pan and stir to coat the squid evenly. Cook for an additional 2-3 minutes, until the sauce has thickened and the squid is fully cooked.
  • Stir in the sesame oil and remove the pan from the heat. Serve the dark soy sauce squid immediately, garnished with chopped scallions or fresh herbs if desired.
