- 2 lbs of boneless skinless chicken breasts, cut into bite-sized pieces
- 2 tbsp of vegetable oil
- 1 onion chopped
- 2 cloves of garlic minced
- 2 tbsp of Jamaican curry powder
- 1 tsp of cumin
- 1 tsp of allspice
- 1 tsp of thyme
- 1/2 tsp of salt
- 1/2 tsp of black pepper
- 1 cup of chicken broth
- 1/2 cup of coconut milk
Heat the vegetable oil in a large pot over medium heat.
Add the onion and garlic and sauté for 2-3 minutes until the onion is softened and fragrant.
Add the curry powder, cumin, allspice, thyme, salt, and black pepper to the pot and stir to combine. Sauté the spices for 1-2 minutes until they are fragrant and toasted.
Add the chicken pieces to the pot and stir to coat them in the spice mixture. Sauté the chicken for 2-3 minutes until it is lightly browned on all sides.
Pour the chicken broth and coconut milk into the pot, and stir to combine. Bring the mixture to a simmer, and then reduce the heat to low. Cover the pot and allow the curry to cook for 15-20 minutes, or until the chicken is cooked through and tender.
Serve the curry hot with your choice of rice and peas. Enjoy!
