First, you'll need to fillet the striped bass. To do this, lay the fish on a cutting board and use a sharp knife to cut along the spine from head to tail. Carefully remove the fillet from the bone and discard the bones.
Using a food processor, mince the striped bass fillets until they are finely chopped.
In a large mixing bowl, combine the minced striped bass, breadcrumbs, mayonnaise, egg, Dijon mustard, Worcestershire sauce, Old Bay seasoning, minced parsley, salt, and pepper. Mix until everything is well combined.
Form the mixture into patties about 2-3 inches in diameter.
Heat the vegetable oil in a large skillet over medium-high heat.
Add the striper cakes to the skillet and cook for about 3-4 minutes on each side, or until they are golden brown and crispy.
Remove the striper cakes from the skillet and place them on a paper towel to absorb any excess oil.
