Ingredients
  

  • 1 lb. fresh asparagus trimmed and chopped
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 large eggs
  • 1 cup milk
  • 1/2 cup olive oil
  • 1 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh chives

Instructions
 

  • Step 1: Preheat your oven to 375 degrees Fahrenheit. Grease a 9-inch round cake pan with butter or cooking spray and set aside.
  • Step 2: In a large mixing bowl, combine the flour, baking powder, salt, and black pepper. Whisk together until well combined.
  • Step 3: In a separate mixing bowl, beat the eggs until they are light and frothy. Add the milk, olive oil, Parmesan cheese, parsley, and chives. Mix well until the ingredients are well combined.
  • Step 4: Add the wet ingredients to the dry ingredients and mix until the batter is smooth and well combined.
  • Step 5: Fold in the chopped asparagus and mix until the asparagus is evenly distributed throughout the batter.
  • Step 6: Pour the batter into the prepared cake pan and smooth out the top with a spatula.
  • Step 7: Bake the cake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • Step 8: Remove the cake from the oven and let it cool for 10-15 minutes before removing it from the pan.
