Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup 1 stick unsalted butter, at room temperature
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup milk

Instructions
 

For the mousse:

  • In a small bowl, whisk together flour, baking powder and salt. Set aside.
  • In the butter, cream together sugar, eggs and vanilla until light and fluffy. Stir in milk until just combined.

To make the cake

  • Preheat oven to 350°F (175°C). Grease and flour an 8x8 inch baking pan.
  • Sift together flour, baking powder and salt; set aside.
  • In the butter, cream together sugar, eggs and vanilla until light and fluffy. Stir in milk until just combined. Set aside to cool slightly.
  • Spoon batter into prepared pan; spread evenly over bottom of cake pan. Sprinkle with confectioners’ sugar if desired. Bake for 25 minutes or until a toothpick inserted into center comes out clean. Cool completely before
