Ingredients
  

  • 1 lb. chicken breasts
  • 1 tbsp. olive oil
  • 1/2 onion diced
  • 1 green bell pepper diced
  • 1 red bell pepper diced
  • 1 tsp. black pepper
  • 1/4 tsp. salt
  • 1 tsp. cumin
  • 1/4 tsp. paprika
  • 1/4 tsp. garlic powder
  • 3 cups chicken broth
  • 2 cups white wine
  • 8 oz. sliced tomatoes chopped

Instructions
 

  • Preheat a large skillet over medium heat and add the olive oil. Add the onion, bell peppers and black pepper and cook until softened, about 5 minutes.
  • Add the salt, cumin, paprika and garlic powder and cook for an additional minute or until the spices are activated.
  • Add the chicken broth and white wine to the pan and bring to a boil. Reduce the heat to low and simmer for 30 minutes, or until the chicken is cooked through.
  • Remove from the heat and let cool for 10 minutes before slicing into thin strips using a sharp knife. Serve with your favorite toppings!
