- 1 lb. chicken breasts
- 1 tbsp. olive oil
- 1/2 onion diced
- 1 green bell pepper diced
- 1 red bell pepper diced
- 1 tsp. black pepper
- 1/4 tsp. salt
- 1 tsp. cumin
- 1/4 tsp. paprika
- 1/4 tsp. garlic powder
- 3 cups chicken broth
- 2 cups white wine
- 8 oz. sliced tomatoes chopped
Preheat a large skillet over medium heat and add the olive oil. Add the onion, bell peppers and black pepper and cook until softened, about 5 minutes.
Add the salt, cumin, paprika and garlic powder and cook for an additional minute or until the spices are activated.
Add the chicken broth and white wine to the pan and bring to a boil. Reduce the heat to low and simmer for 30 minutes, or until the chicken is cooked through.
Remove from the heat and let cool for 10 minutes before slicing into thin strips using a sharp knife. Serve with your favorite toppings!
