Ingredients
  

  • 1 1/2 lbs. boneless Chicken
  • 1/2 onion diced
  • 1 carrots diced
  • 3 cloves garlic minced
  • 3 cups chicken broth
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 2/3 cups 2 sticks unsalted butter, at room temperature
  • 5 large eggs beaten
  • 1 cup chopped fresh parsley leaves

Instructions
 

  • Preheat oven to 350 degrees F. Line a baking dish with parchment paper.
  • In a large pot or Dutch oven over medium heat, sauté onions and carrots in garlic until softened. Add chicken breasts and cook until browned and cooked through, about 8 minutes per side.
  • Add chicken broth to pot and bring to a boil. Reduce heat to low and simmer for 30 minutes.
  • In a small bowl, whisk together flour, salt and pepper; set aside.
  • Add butter to the pot and simmer for 5 minutes just until melted. Add eggs and scramble until set. Stir in parsley before serving.
