- 1 pound boneless skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon cumin
- 1/4 teaspoon black pepper
- 1/4 cup olive oil
- 1 onion diced
- 3 cloves garlic minced
- 1 green bell pepper diced
- 2 tablespoons tomato paste
- 4 cups chicken broth
- 8 ounces Sharp cheddar cheese shredded (optional)
Preheat the oven to 400 degrees Fahrenheit.
Season the chicken with salt and cumin. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
Stir in the bell pepper and tomato paste and cook for an additional 5 minutes.
Add the chicken broth and bring to a boil. Reduce the heat to medium and simmer for 30 minutes, or until the chicken is cooked through. Remove from heat and let cool slightly.
To assemble the dish, spoon 1/4 cup of the chicken broth into a small bowl and add theSharp cheese (if using). Serve the chicken mixture over steamed rice or quinoa. Enjoy!
