The Tinga de Pollo Recipe is originally from the State of Puebla, but it is not classified as a Traditional Cinco de Mayo Food, since the city of Puebla has many other dishes and the inhabitants of the City of Puebla do not make such a big celebration as in the U.S.
Some families from Puebla celebrate mainly by going to the annual parade that the city celebrates on the occasion of the famous Battle of Puebla that took place on the Cerro de Acueyametepec, where the Forts of Loreto and Guadalupe are located.
Why do we celebrate Cinco de Mayo?
The victory at the battle of 5 de Mayo was of great importance to Mexican-Americans of that time. General Ignacio Zaragoza, leader of a poorly armed force of Mexican soldiers, won the May 5 battle against the undefeated French army.
The French army, twice the size of Zaragoza’s men, was considered the most powerful army in the world. What few people know is that Texas, New Mexico, Arizona and California were once part of the Mexican Republic, just 15 years before the battle of 5 de Mayo.
Although these territories were part of the US at the time of the 5 de Mayo battle, the epic battle was celebrated by Mexican-Americans from Texas to California as a way of showing solidarity with their mother country.
